Sumatra Mandheling Bener Meriah
Bener Meriah is a coffee growing region of the Aceh province acclaimed for its exceptional cup quality and classic Indonesian style of cultivation and processing. This coffee comes via the GARMINDO cooperative with more than 500 member farms each averaging less than 3 acres. These farmers belong to the native Gayonese ethnic group who maintain a traditional village lifestyle.
Each producer carefully sorts their harvested cherries before de-pulping and fermenting overnight with personal micro-mills. The coffee is then washed and laid out on patios to shed the excess water from the parchment covered beans. In contrast to the conventional processing path, the coffee parchment is then removed while the coffee retains a high level of moisture. Now "exposed" the coffee beans are patio dried to a moisture percentage suitable for export.
This "wet-hulling" process gives the bean a unique bluish hue and aids in the development of the full bodied, early sweetness many of us love about Sumatran coffee.
