The island of Flores is in Southern Indonesia. Coffee is grown on the slopes of Inerie Volcano in the Ngada district and processed by cooperatives in the town of Bajawa. This coffee comes from the effort of 7 farmer groups working together to produce higher quality, organically certified coffee.
Ngura, meaning "wet-hulled" in the Bajawa language, is a process unique to Indonesia. Following a typical depulping, fermenting and washing stage, the drying process is quickly interrupted. The coffee is sold, relocated and further partially dried. While maintaining significant moisture the coffee's protective parchment is removed or "wet-hulled" from the seed before finally being quickly air dried before export. A seemingly complicated effort, the quick pace of wet-hulling is however quite suitable in the humid and rainy climate of the islands where it is difficult to dry coffee consistently for extended periods of time.
