El Salvador Finca El Retiro - honey
This specialty microlot coffee from Café Pacas is shade-grown on the 46 acre farm of Eduardo Figueroa in the tropical hills of El Salvador’s rich, cool Apaneca-Ilamatepec Mountain Range outside Santa Ana. Café Pacas is a fifth generation, family-owned operation dedicated to producing high quality coffee with a commitment to ensuring success for all those associated with its production. As well, a key goal includes the preservation of natural resources and protection of biodiversity through sustainable and regenerative farming practices.
With the honey process, the skin and pulp are carefully removed from the coffee cherries while leaving much of the fruit on the bean. These remnants, properly monitored, then ferment into the bean resulting in a very pleasant cup profile with accentuated sweetness, and citrusy overtones.
