Burundi Kayanza Incuti
Born out of a cooperative effort between JNP Coffee and a producer group in Kayanza Province, this coffee benefits from the outstanding terroir of the region and the dedicated consulting assistance provided by JNP. Founded by Jeanine Niyonzima-Aroian, JNP Coffee works to ensure quality in processing, generating premiums and investing in opportunities for coffee growing communities. This coffee, created from two distinct processing lots, is titled Incuti, which translates to “relative”, and is often used to mean ‘’friend” in Kirundi. A fitting title for a new coffee relationship between Burundians.
Fully washed processing by the Incuti group is extremely detailed. Cherry is floated for density and visible defects prior to depulping and fermentation. Following fermentation it is sorted by density again in concrete washing channels. Drying begins under shade, then is moved to open air. The beans, in parchment, are piled into pyramids, then flattened and re-shaped each day as a form of incremental air exposure to slowly and evenly dry the coffee and lock in the final moisture. The resulting profile is juicy and lime-like, a great expression of high-elevation Kayanza.
