Brazil Pocos de Caldas - natural

The region of Pocos de Caldas lays on the outer rim of an extinct volcano in southwest Minas Gerias (the Brazilian state adjacent and inland to São Paolo and Rio de Janiero). A huge plateau surrounded by fields, valleys and mountains, its rich volcanic soil combined with high altitude makes this region ideal for specialty coffee. Cooler winter temperatures allow the coffee cherries to develop slowly producing greater complexity in the cup. Typically fruit forward with plum jam, red apple and milk chocolate, this coffee is processed using the natural method where by the cherries remain on the coffee seeds throughout the drying process.
