Mexican Chiapas Los Altos

Located in the south of Mexico, Chiapas is recognized as producing quality coffee due to its high altitude and rich biodiversity.   This coffee comes from the central highlands near San Cristobal de las Casas.   Produced on small farms, most no larger than 2 hectares, the coffee is cultivated by the extended family who move from plot to plot to complete the necessary tasks.  The ripe cherries are handpicked and pulped, fermented under shade then washed clean before drying.
