Costa Rica Hacienda Limonal - black honey process

Hacienda Limonal is located in the heart of the famous coffee region of Tarrazú.  With an emphasis on making microlots, the farm works with a wet mill in the region of Tres Ríos that dates back to 1888.  As a "black honey" coffee, the skin and pulp of the coffee cherry is removed during initial processing; but the sweet, sticky fruit mucilage remain intact while drying.  This creates a sweet and complex, fuller-bodied coffee.
