Costa Rica Santa Cruz - honey process

This coffee comes from just 15 small producers, collectively working on less than 50 acres in the community of Santa Cruz. Integrating coffees from several farms for a honey processed ensemble is designed to create greater complexity in the cup.

Each farm selects their ripest cherries which are combined and pulped; yet 80% of the mucilage remains on the seed during the drying stage, which constitutes the "honey" process. Leaving the cherry remnants to ferment into the bean brings sweetness, accentuated body and citrusy overtones to the taste.

Cup Profile:  strawberry aroma, orange blossom, sweet blood orange, cane sugar - light/medium roast
